Norman W. Walker: Juicing Pioneer

In recent Health Tips, I have shared the life stories of men who have greatly inspired and encouraged me in my quest to learn how to live a long and healthy life on planet earth so that I could better maintain a body fit for the Master’s use.
Jack LaLanne and Paul C. Bragg are two of my three “Health Heroes,” named as such because each of them, though earlier in life were seriously ill, changed their diet and lifestyle, restored their health, and went on to maintain a strong and healthy body until nearly the Century Mark.
In this Health Tip we are going to examine the life of Norman W. Walker, my third “Health Hero” who was born on January 4, 1886 and died June 6, 1985 at the age 99 years and 5 months.
Dr. Norman Walker’s First Half Century of Life
Norman W. Walker, D.Sc., Ph.D., was born in Genoa, Liguria, Italy to Robert Walker, a Baptist Minister from Scotland. The family later moved to England where in October 1910, on the S.S. Lusitania, arrived in New York City, and on November 22, 1918 was granted U. S. citizenship.
In his early 50s, Dr. Walker became seriously ill. Rather than going the traditional medical route for his sickness, he turned to Dr. H. William Baum, a chiropractor and physical therapist. At the suggestion of Dr. Baum, Dr. Walker turned his back on the Standard American Diet (SAD) of his day, and changed his diet to raw vegetarian.
(EDITORS NOTE: In 1978, while on staff as a lecturer and head gardener at the Shangri-La Health Resort in Bonita Springs, Florida, I personally met and had an extended talk with Dr. Baum. He shared with me a lot of information about Dr. Walker and gave me what was then a recent photograph of both he and Dr. Walker. Dr. Baum personally autographed the photo on the back side with the words: “To George Malkmus, Compliments Dr. H. W. Baum.” (see below) Also on the back of the picture were the words: “Dr. Norman Walker, Natal Day – January 28, 1867.” Since we know for sure Dr. Walker died on June 6, 1985, that date of birth would have made Dr. Walker 119 years old at his death. This 1867 date of birth conflicts with more recent research which places his birth date as January 4, 1886, which would have made him 99 years and 5 months at death. No matter his actual age at death, Dr. Walker lived a very long life.)

Dr. Walker’s Last Half Century of Life
Following his conversion to a raw vegetarian diet, for nearly a half-century, Norman W. Walker went on to prove through research and personal experience that well being and long life can go hand-in-hand. Modern-day nutritionists and medical researchers are just now discovering some of the truths Dr. Walker knew and expounded upon.
Dr. Walker himself became living proof that a longer, healthier life may be achieved, starting even in later life, through proper diet, mental soundness, and intelligent body care. He left behind his research and unique contributions to health for all to read in his numerous writings. (His books are still available for all to read and are carried by Hallelujah Acres.)
Dr. Walker was notable for at least three reasons: (1) He was author of at least eight books published from 1937 to 1978. (2) He was the inventor of an important and innovative commercial juicer that is still manufactured today. (3) He was a pioneer in the raw foods, juicing, and vegetarian movements, each of which has grown in size and scope over the years.
For several years, Dr. Walker ran a health ranch in Arizona. Eventually, he gave up the ranch to devote his later years entirely to research and writing.
Dr. Walker’s Views on Nutrition
Dr. Walker advocated a diet based solely on raw and fresh foods like vegetables, fruits, seeds and nuts. He considered cooked or baked foods dead and therefore unhealthful, saying that “while such food can, and does, sustain life in the human system, it does so at the expense of progressively degenerating health, energy, and vitality.”
As a strict vegan, he did not recommend the eating of meat, dairy or dairy products (with the exception of raw goat milk), fish or eggs. His diet suggestions also avoided such staple foods as breads, pasta, [white] rice and [refined] sugar.
Dr. Walker devoted large sections of many of his books to the description of the different organs of the human body, explaining how the digestive system and the various glands work. He considered a healthy colon key to one’s health, and estimated that 80% of all disease begins in the colon. He wrote: “Every organ, gland and cell in the body is affected by the condition of the colon.”
According to Walker, the number one affliction underlying almost every ailment is constipation. In other words, it is “the primary cause of nearly every disturbance of the human system.” This is because the blood vessels lining the colon collect nutrients missed by the small intestine.
In his book, Pure and Simple Natural Weight Control, Dr. Walker explained, “If the feces in the colon have putrefied and fermented, any toxic elements present in it would pass into the bloodstream. What would otherwise be nutritional instead generates toxemia, a condition in which the blood contains poisonous products. . . .”
Pimples can be an indication of the presence of toxemia. Walker maintained that the Standard American Diet (SAD) causes the colon to be filled with toxins that strain the eliminative channels and ultimately, the immune system.
Dr. Walker believed that dairy products had an especially deleterious effect on human health. He testified to the disappearance of many ailments upon the exclusion of dairy products. He explained that pathogenic organisms find an ideal breeding ground in the excess mucus that dairy products generate.
He cited the following diseases as being aggravated or caused by mucus conditions in which dairy products are the major offenders: undulant fever, colds, flu, bronchial troubles, tuberculosis, asthma, hay fever, sinus trouble, pneumonia, and certain types of arthritis.
Dr. Walker in 1910 established the Norwalk Laboratory of Nutritional Chemistry and Scientific Research in New York and later discovered the therapeutic value of fresh vegetable juices. He discovered carrot juice. He also developed the Triturator Juicer, known today as The Norwalk Press Juicer, the granddaddy of juicers.
The present “juicing craze” is directly attributable to the incredible dedication of this great man. Thousands of people credit Dr. Walker’s live vegetable juice therapy for healing them of incurable diseases, including Jay Kordich, known as the “Juiceman”, who popularized juicing in the United States with extensive television advertising in the 1990s.
When Jay Kordich had cancer, he met and was tremendously inspired by Dr. Walker. After healing himself of cancer through the raw food diet and juice therapy promoted by Dr. Walker, Jay worked with Dr. Walker beginning in the 1940s and right up until Dr. Walker’s death.
Dr. Walker’s discoveries and the advocating of raw vegetable juices in the restoration of health has lived on in the promotion of juicing by Jay Kordich, Paul Bragg, Jack LaLanne, and yes, even to this day, by this editor and Hallelujah Acres.
Dr. N. W. Walker was living proof that a longer, healthier, more enjoyable life is achievable through mental poise, intelligent body care, and the abundant use of raw vegetable juices.
Dr. Walker observed a raw food diet, with the abundant use of raw vegetable juices right up until his death at the age of 99 years and 5 months. He also remained both physically and mentally healthy and active up to the day of his death, when he peacefully died during his sleep one night at his home.
EDITOR’S CONCLUDING THOUGHTS
Dr. Norman W. Walker, along with Paul Bragg, and Jack LaLanne, my Health Heroes, are men I have tried to emulate. It is my hope that after reading their testimonies, you will make them your Health Heroes as well, and that you will desire to emulate their diets and lifestyle as I have.
What Dr. Walker, Paul Bragg, and Jack LaLanne, preached and practiced for many, many, years is what this editor has been preaching and practicing for the past 35 years.
If you, my friend, are not on The Hallelujah Diet, if you will but stop putting the world’s SAD diet into your body and start eating those foods God told us to eat in Genesis 1:29 and start exercising, then you too can most likely experience the miracle in your body that Dr. Walker, Paul Bragg, Jack LaLanne, and this editor have experienced.
And please don’t say that you are too old or sickly to begin. No matter how old or sickly you may be, in most instances a change in diet and lifestyle can start you on the road to recovery – a road that can restore your health, and possibly save your life.
What’s So Special About Carrot Juice?

Thirty-five years ago, when I was told I had colon cancer, Evangelist Lester Roloff encouraged me to eliminate all animal foods (both flesh and dairy) from my diet, along with refined sugar and refined grains.
He went on to encourage me to consume lots of carrot juice if I wanted to restore my health. Not understanding all the reasons why, I took his advice.
Within days of making these dietary changes my rectal bleeding had stopped. Within less than a year the tumor in my colon had disappeared – all without any help from a doctor or the use of any chemotherapy, radiation, or surgery.
After this experience I rationalized that if carrot juice could help my body recover from colon cancer, it might be good to continue consuming it order to help me remain well. And I have done just that.
Today, 35 years after eliminating some health-destroying things and adding carrot juice to my diet, I find myself just three years short of my 80th birthday still alive and well with an extremely youthful body.
Now I’m not saying that it was the carrot juice all by itself that has allowed me to enjoy such excellent health, but I do believe with all my heart it has been a huge factor.
What’s In Carrot Juice That Makes It So Special
Carrot juice not only tastes good (if the carrots are grown in California – more on that later), it has a vast array of nutrients and health benefits. It’s also easily absorbed and highly cleansing.
Carrots contain approximately 16% sugar. Some think this is negative because it results in a glycemic index of 80. However, research here at Hallelujah Acres reveals that it has less spiking affect on the blood than a baked potato or two slices of whole wheat toast.
Carrots are one of the most healing foods, providing the finest and highest quality nutrients, especially in juice form. Carrots are an excellent source of pro-vitamin A in the form of carotene, along with vitamins C, D, E, K, B1 and B6.
Carrots are rich in biotin, potassium, calcium, magnesium, phosphorus, organic sodium, plus lots of trace minerals. Carrots are also high in anti-oxidants and are loaded with enzymes.
Phytonutrients are nature’s marvelous provision in healing various diseases. Carrots are also rich in phytonutrients, including lutein, lycopene, antioxidants, alpha, beta, and gamma carotenes, zeaxanthin, and xanthophylls.
Carrots Effect on Common Health Problems
Acidosis
The alkalizing elements in carrot juice help balance the blood’s acidity as well as blood sugar levels.
The Standard American Diet consists of highly acidic animal protein, refined sugar and grains. Conversely, The Hallelujah Diet contains lots of alkalizing plant sourced foods (carrot juice being one of the most alkalizing). When people stop consuming the Standard American Diet and start consuming The Hallelujah Diet, they are usually able to stop taking their over-the-counter and doctor prescribed antacids in a short period of time.
Anemia
The molecules in carrots are very similar to the molecules in human hemoglobin, making it a tremendous blood builder.
Atherosclerosis
This miraculous cleansing power of juices helps scrub away built-up fat deposits on arterial walls, reducing risk of heart attack and stroke, while often eliminating need for medications due to high blood pressure.
Cancer
The daily consumption of fresh carrot juice not only reduces cancer risk, but also contributes in its reversal after the cancer has manifested.
At the Gerson Institute in Tijuana, Mexico, they have helped patients empower their immune systems to reverse cancer (even terminal cancer). Patients receive eight glasses of freshly extracted carrot juice daily and four glasses of green juices along with other healing modalities.
Cholesterol
The pectin in carrot juice helps lower serum levels of LDL cholesterol, reducing the need for cholesterol lowering medications.
Congestion
The juice of carrots is extremely effective in dispelling mucus from the ears, nose and throat, while improving sinusitis, asthma, and allergy problems.
Eyes
The beta-carotene, lutein, lycopene, and zeaxanthin found in carrot juice are some of the most powerful nutrients for the optic system. In addition to helping to improving eyesight, these nutrients also provide special protection against astigmatism, macular degeneration, cataracts, and glaucoma.
After consuming carrot juice on a daily basis since the 1970s, I was able to pass my North Carolina drivers eye test without glasses at the age of 75. This ended a restriction on my driver’s license for corrective lenses after over 50 years.
Infertility
One of the primary reasons for infertility is a lack of nutrients and enzymes in the diet. Regular use of carrot juice can help provide nutrients that benefit the reproduction system.
In fact, dozens of women who could not conceive prior to adopting The Hallelujah Diet have been able to conceive after changing their diet.
Inflammation
Carrot juice has anti-inflammatory properties that greatly reduce the symptoms of arthritis, rheumatism, gout, and other inflammations.
Immune System
Most people who consume the Standard American Diet (SAD) have immune systems that are not sufficiently protective against germs, viruses, and bacteria. Carrot juice is a powerful immune system builder. It helps the body build resistance to germs, viruses, bacteria, and infections.
Nursing Mothers
Carrot juice enhances the quality and quantity of mother’s breast milk, helping the baby to grow strong and resistant to disease.
Skin Problems
The incredibly high quality nutrients in carrot juice nourish the skin. This helps prevent dry skin, psoriasis, and other skin problems. It also helps improve or eliminate these conditions if they already exist.
Water Retention
Carrot juice is a diuretic that helps the body eliminate excess fluids, reducing water retention, and thus reducing the need for medications. Carrot juice is especially helpful for women during their monthly menstrual cycle and during pregnancy.
The above is only a short and partial list of the benefits one can derive from the regular consumption of carrot juice. There are numerous more benefits, but we could go on for days.
Eating Carrots vs. Juicing Carrots
In short, you simply cannot get the same benefits of carrot juice by eating carrots.
According to Dr. Kirschner (M.D.) in his book Live Food Juices, eating a carrot forces your digestive system to separate the carrot fiber from the carrot juice. This uses a lot of energy and destroys over 65% of the nutrients in the process.
Dr. Kirschner goes on to say that juicing carrots before consuming them is a different story. The juicing machine removes the pulp for you, eliminating much of the digestive process. As a result, 92% of the nutrients are available at cellular level for almost immediate use.
It takes approximately one pound of carrots to produce eight ounces of carrot juice. Few people could eat a pound of carrots even if the nutrient intake was the same. Consuming eight ounces of carrot juice is much easier.
It Matters Where Your Carrots Come From
Carrots that contain the highest level of nutrients produce the sweetest juice. That is why we personally use and recommend California-grown carrots. The Hallelujah Acres Store carries the Bunny Luv (Grimmway Farms) brand of organic carrots.
Ancient volcanic activity in the California region accounts for a large amount of trace minerals in the soil. Trace minerals produce a sweeter carrot. For the same reason, California-grown fruits are sweeter, as are fruits grown in Oregon and Washington state.
The Best Juicers For Carrots
I do not recommend a centrifugal juicer for juicing any vegetable. This kind of juicer has a basket that spins at a very fast speed (up to 3,000 RPM) which flings the juice through the air, causing oxidation. Centrifugal juicers are more affordable than other juicers and are better than nothing. However, they are not advisable for a person dealing with a serious illness.
Champion Juicer
This is a workhorse of a juicer that has been around for a very long time. It does an excellent job of juicing carrots but not as good a job juicing leafy greens.
Green Star Juicer
This juicer does an excellent job juicing carrots as well as leafy greens. The brand new Green Star Elite is an exceptional machine and probably the best juicer on the market today except for the $2,000 Norwalk Press.
Hurom Juicer
This is an excellent juicer for the person who has very little room on their countertop. It has a small footprint in comparison to the juicers mentioned above. It is also easier to use for the person without a lot of arm strength, but not recommended for large amounts of juicing.
Why Factory-made Carrot Juice Is Not Worth Your Money
I believe factory-made carrot juice, commercially available in a can, bottle or other container, is basically worthless. These juices have either been cooked or pasteurized, which destroys the enzymes. They are dead food.
Occasionally you will find health food stores that offer freshly extracted, non-pasteurized carrot juice. This juice will usually keep a day or two in the refrigerator.
How To Store Carrot Juice
All of the living nutrients in freshly extracted carrot juice can be preserved for 24 to 72 hours if certain steps are taken. First, use any of the above juicers, strain, and place in 8 oz canning jars all the way to the top. Cover the jars with a tight fitting lid, locking out as much air as possible. Then place in a refrigerator or ice chest (if traveling).

Juicing is one of the best ways to nourish your body and to provide it the building materials it needs to build healthy cells and a strong immune system. It is not always convenient and it takes some time — but I guarantee it is well worth it!

Watermelon Juice – It’s Delicious!

Over 30 years ago I had the privilege of spending some time with Dr. Ann Wigmore at the Hippocrates Health Institute in Boston, Massachusetts learning all I could about her methods of restoring health through plant based nutrition.
She was an amazing woman and was helping so very many people regain their health on a 100% raw plant based diet with lots of fresh vegetable juices and sprouts. It was there I learned to make wheat grass juice.
I found her kitchen very unique, in that it did not have a stove, but it did have a number of juicers. During my time at Hippocrates, every morning for breakfast they had big pitchers of freshly extracted watermelon juice and it was so delicious. It was the perfect start to a hot summer day.
