Watermelon Juice – It’s Delicious!

Over 30 years ago I had the privilege of spending some time with Dr. Ann Wigmore at the Hippocrates Health Institute in Boston, Massachusetts learning all I could about her methods of restoring health through plant based nutrition.
She was an amazing woman and was helping so very many people regain their health on a 100% raw plant based diet with lots of fresh vegetable juices and sprouts. It was there I learned to make wheat grass juice.
I found her kitchen very unique, in that it did not have a stove, but it did have a number of juicers. During my time at Hippocrates, every morning for breakfast they had big pitchers of freshly extracted watermelon juice and it was so delicious. It was the perfect start to a hot summer day.
Ever since then, watermelon juice has been a summer favorite, and it is so easy to make in your juicer.

Rhonda’s Raw Tomato Pesto Soup

Blueberry season is pretty well over here in North Carolina and the tomatoes are coming in like gangbusters. We have several dozen large organic tomatoes from our raised bed gardens presently sitting on our kitchen counter along with a large bowl of Sweet One Hundred tiny tomatoes. They are so sweet we eat them like candy.
We have been picking tomatoes since about the first of June and Rhonda has already made and placed in her freezer many bags of chopped tomatoes with onions, red peppers and basil from our garden. She froze so many bags of blueberries and now tomatoes, our freezer won’t hold much more until we start consuming those goodies.
So with no more room in the freezer, Rhonda is using large amounts of tomatoes in a raw soup that is exceptionally tasty.
