Raw, Dairyless Blueberry Cheesecake

Blueberries are still in abundance here in North Carolina. Here in the Malkmus household we are still taking advantage of them for some very tasty dessert treats. Blueberries are one of the highest sources of antioxidants and besides being tasty are very good for you.
Last week in Health Tip # 658 we shared a recipe for non-dairy blueberry “yogurt” that we think tastes as good as the real thing. Today we share another of Rhonda’s tasty blueberry desserts that has been a big hit, especially during the hot summer days we have been experiencing here in North Carolina. Raw Blueberry Cheesecake.
To be able to make a cheesecake without dairy is exciting. And though it could probably be eaten thawed, we are enjoying it kept in the freezer and then just cutting a small slice and enjoying it in its frozen state. It is very filling and a small slice satisfies.
This exciting recipe is raw and made with highly nutrient dense ingredients. It is high in protein, good fat, and loaded with antioxidants. And to think it contains none of the negatives found in dairy and refined sugar found in traditional dairy cheesecake.
We have made this dairyless cheesecake with blueberries, but I see no reason you couldn’t make it using strawberries, or raspberries, or mango, or possibly some other fruit.
Raw Zucchini Hummus

Rhonda is constantly creating new recipes. With zucchini coming from our garden in abundance, she recently experimented with using zucchini to make a hummus and it turned out tasty enough to share. It can be used not only as a hummus, but also a veggie dip or even a sandwich spread in place of mayonnaise.
Raw Organic Blueberry Pie

Here in North Carolina, blueberries are just beginning to ripen, and are they ever delicious. Rhonda and I planted 47 Rabbit Eye blueberry bushes along our driveway this past winter and they are providing us with an unbelievable amount of blueberries this first season.
There are so many things you can create with these nutritious berries. This past week Rhonda made me a frozen blueberry non-dairy cheese cake (made with macadamia nuts) that was absolutely delicious. This week she made a blueberry pie using a nut crust that was so tasty I just have to share the recipe.
Rhonda’s All-Purpose Sea Vegetable Seasoning

Flavor is what makes the difference between a bland tasting food and one that is lip-smacking good. There are a number of seasonings like MSG, table salt, vinegar, sugar, etc. that enhance the flavor of food, but are a detriment to our health.
Rhonda has come up with a seasoning that not only enhances flavor, but is actually good for you. It is made with raw dehydrated sea vegetables and contains all kinds of nutrients – Vitamins A, B-6, C, Chlorophyll, Protein, Enzymes, Riboflavin, Niacin and Enzymes; along with a nice array of naturally occurring minerals: Calcium, Sodium, Potassium, Magnesium, Phosphorus, Iodine, Chromium, and Zinc, plus many other naturally occurring trace minerals.

Avocado / Raspberry / Banana Green Smoothie

Here at Hallelujah Acres we have recently been greatly increasing our use of green smoothies, and their popularity has been growing by leaps and bounds. Greens are not always the sweetest things to eat, but by combining the greens with the natural sweetness of fruits, we are able to greatly increase our greens intake.
This new combination of fruits and greens has the added benefit of a wonderful source of protein – avocado. It makes an even creamier, more nutritious healthy drink. Have it for a satisfying mid-morning snack or even a meal.

In Rhonda’s most recent Culinary Class on April 30th here at Hallelujah Acres, this recipe was prepared and taste-tested by those in attendance. It was a big hit, and we thought you might like to try the recipe in your own home.
