Hearty, Healthy, Tummy Warming Chili

Record cold temperatures have held the central and eastern sections of these United States in the deep freeze for the past month, and yet there are those who continue to tell us that Global Warming is such a threat we need to add to every American’s tax burden some $2,000 a year in order to help reduce the release of CO2 into the atmosphere, which they claim is the cause of Global Warming.
It is amazing, that in spite of weather records showing that a cooling trend began in this country ten years ago, and we have been experiencing record breaking cold temperatures and record breaking snowfalls this winter, many legislators in Washington continue their efforts to push for restrictions on all forms of energy produced by fossil fuel – primarily coal and oil.
Well instead of continuing any further with this Global Warming issue, let’s think about something that will bring about some tummy warming on a cold winters day. And nothing warms the tummy (and even the heart) like a nice hot bowl of vegetarian chili. Packed with vegetables, this chunky chili is the perfect cure for the cold-weather blues.
Hearty Split Pea Soup

Well, I’m not a prophet, but I sure was right when I said “January in most areas of the United States is the coldest month of the year,” because most of the central and eastern parts of the U.S. have been in the deep freeze in recent weeks.
And talk about Global Warming – Why friends, Global Warming is one of the biggest hoaxes ever perpetrated upon not only the American people but on most of the nations of the world. If we have anything, we have Global Cooling! (See my article titled “Scientists Say Global Warming Just Isn’t So”.)
So since it is still winter and still cold in most of the United States, let’s enjoy another heart healthy and body warming soup this week.
There is just something warming and comforting about a home-made bowl of a vegetarian soup on a cold winters evening and this split pea soup should fill the bill, and by the way, split peas are very inexpensive, thus making a very economical meal. Full Recipe
Colonial Bread

This being the last issue of the Hallelujah Health Tip for 2009, we will end the year with a bread recipe. Colonial Bread is found on page 185 of Rhonda’s beautiful 269-page, spiral bound, Hallelujah Holiday Recipes – From God’s Garden book which we have been featuring recipes from for the past month or so.
This recipe, though it contains some white flour to keep the bread from becoming too heavy, was a tremendous hit in our first restaurant in Rogersville, Tennessee back in 1992 and 1993. The bread was made in small individual loaves and served with salads and soups. The original individual loaf pan we used to make this bread is now in a memorabilia display in our new Hallelujah Acres Café in Shelby, North Carolina.
If you have opportunity to visit Hallelujah Acres during the New Year 2010, I trust you will plan on enjoying lunch in our new and upgraded vegan Hallelujah Café, with its enlarged menu, and tasty offerings. Included in the new Entrees is an Herb Crusted Papaya “Salmon” which looks like the real thing. Another offering is a Marinated Portobello Berger. My favorite is a Spinach and Sun-dried Tomato Pizza with white sauce and onions made with macadamia cheese served with a house salad.

Recipes for Life: Raw Holiday Cranberry Sauce

Many people include cranberry sauce as a part of their holiday meal, but usually it comes from a can. Well here is a cranberry sauce unlike any I have ever tasted, and it is not only raw, but absolutely delicious. Rhonda started making this one for me a few years ago and it’s the first cranberry sauce I go back for seconds for. This recipe is found on page 38:
Ingredients
- 2 cups fresh cranberries (ground)
- 1 orange (grate off outer rind and then chop very fine)
- 2 ripe pears (peeled and chopped fine)
- 1 medium apple (peeled and chopped fine)
- ½ cup walnuts or pecans (chopped into small pieces)
- 4 celery ribs (chopped fine)
- ½ cup raisins or dates (if using dates, chop fine)
- * 1 teaspoon cinnamon or pumpkin pie spice
- * ¼ teaspoon ginger
- * ¼ teaspoon allspice
- * ½ cup raw unfiltered honey or agave nectar
Instructions
Grind berries; add fruits, nuts and spices. Then place all ingredients in a bowl and mix well. Cover and place in refrigerator until ready to serve. Serve on a bed of leaf lettuce. Keeps well covered and in the refrigerator for several days. ENJOY
Option: Leave berries whole and place in a saucepan with all remaining ingredients. Simmer until thickened, stirring occasionally.
*Organic ingredients are always recommended.
